The way the tea leaves are processed determines the type of tea

There are basically six stages that can be used to process tea. The six stages are plucking, withering,rolling,and shaping,oxidizing, firing and sorting. Each process has an affect on the tea leaves and what kind of tea they will be. The end result comes from the order of the process which begins once the tea leaves are picked or plucked. Some teas are picked by machine, others are plucked by hand. Some teas are rolled and shaped, crushed or twisted. These can be done by hand or by machine also.
